No-Crap Blueberry Spread

Yeah, I said the word ‘spread’ in the same sentence as ‘Crap’. Ew. I get it. The word ‘spread’ alone is bad enough. But Jam and jelly are too boring, and I wanted you guys to know how clean and guilt-free this recipe is.

I usually make berries on the stove like this and put a mound of fresh whipped cream on top for dessert. Then I save any leftovers to smear on anything edible. In fact, the muffins pictured here were very bland and had a horrible texture- a Paleo Fail (or #faileo) recipe. But then I threw on some Blueberry Spread and it made it instantly delicious.

Like magic! Expecto Delicioso! (I love pretending to be Harry Potter. His birthday is in 14 days BTW. Guess who still has her wand in her closet? THIS GIRL.)

HP nerd alert aside, my birthday is on Friday but I’ll be working a double then. So I decided to celebrate it today which means I’m heading over to a new Taqeuria on the beach to try out some awesome tacos. Gluten free yes, but not grain-free. Then I’m having some gourmet ice cream cake that my bf ordered for me, which may or may not have actual pieces of cake in it.

Woops. #saveithaters <— One of my new favorite hashtags on Instgram right now. Though it still doesn’t seem to fend off the haters in the comment section. Ohwell. You only turn 24 once. Which is actually really scary/depressing, so drowning myself in ice cream cake sounds perfectly reasonable to me.

Blueberry Spread

Prep Time: 3 minutes

Cook Time: 12 minutes

Total Time: 15 minutes

Yield: 1.5 cups

Blueberry Spread

Ingredients

  • 2 cups fresh organic blueberries
  • 2 tbsp raw honey
  • 2 tsp fresh lemon juice
  • 2 tsp gelatin
  • 2 tbsp hot water

Instructions

  1. Heat the blueberries, honey, and lemon juice over medium heat in a medium/small saucepan.
  2. Cover with a lid for 4 minutes.
  3. Meanwhile soak the gelatin in 2 tbsp of hot water for 2 minutes. Then stir it in with the blueberries.
  4. Reduce the stove temp to low heat and cook for 6 more minutes while the blueberries break down.
  5. The spread should be syrupy thick and not dry. Adjust the cooking time if you need to since some stoves run hotter/colder.
  6. Serve hot over grain-free pancakes and coconut ice cream, or chill and use it as jelly on paleo toast.
